Vegan Jamaican Patties
INGREDIENTS:
PASTRY
3 cups of Gram Flour (chickpea flour)
1/2 tablespoon of curry powder
1/2 tablespoons of paprika
1/2 tablespoons of turmeric
1/3 cup of Gram Flour (chick pea flour)
1/4 cup (1/2 stick) Soya butter
Mix the chickpea flour, curry powder, paprika and turmeric into a large bowl. Cut the Soya butter into squares and rub both flour and butter together until crumbly, resembling a sand like texture. Add cups of cold water until it makes a stiff dough. Shape it into a ball, lightly flour a wooden cutting board and roll out the dough until about 1/8-inch thick. Cut out 8-inch circles using a cup or plate (depending on how big you want them).
VEGETABLE FILLING
1/2 tablespoons of curry powder
1/2 tablespoons of paprika
1/2 teaspoons of turmeric
1 cup of mixed vegetables (frozen), or fresh vegetables chopped into little square pieces
1 big onion or 2 small onions, finely chopped
2 teaspoon of Tabasco sauce (personal preference)
half a bag of spinach
In a pan, add 2 tablespoons of vegetable oil, curry powder, paprika, turmeric, mushrooms, onions (or any type of mixed vegetables) and Tabasco sauce. Stir and mix until all the ingredients are cooked.
Cut 2 circles and fill the 1 of the circles with a tablespoon of filling, coat the circle around the filling with Soya milk, put the other circle on top, add more Soya milk to the top of the circled pastry and do this until completed coated. Dab fingers around the side of the pastry, so the filling can be seen poking-up underneath the pastry, and use fingers to crimp the side of the patties – wet fingers first and then press one of your fingers into the pastry until it makes a print march, and then continue around the whole thing.
Bake on a lightly greased baking sheet, or tray greased with Soya butter. Put in the oven for 30 to 40 minutes on Gas mark 4 - 350 degrees F or 180 degrees C.
Curried Pancakes
3 cups of Gram Flour (chickpea flour)
1 jug of cold water
1 small onion
2 cups of mixed vegetables
1/2 tablespoons of paprika
1/2 tablespoons of turmeric
3 tablespoons of Vegetable oil
Get a large mixing bowl and put 3 cups of gram flour in it. Pour in the water and stir until the water and the flour make a paste – not to think and not to runny. Finley chop 1 small onion and mix vegetables (unless you are using pre-chopped frozen vegetables) into the mixture. Once mixed together, get a large spoon and start tripping pancake size circles into a hot frying pan at medium heat – pre-heat the pan so it is hot before making pancakes. Use a spatula to keep turning them around until brown on each side.
